So needless to say I’m always on the lookout for easy appetizer recipes. And when I say easy I mean the kind of easy that you can make ahead and then kind of set and forget. Because who has time for mixing churning, baking, and coating when it’s the actual day of the party? Definitely not me!

And while I’m always looking for ideas these Fried Mac and Cheese Bites have been a constant throughout the year. Mainly because they are mind-blowing delicious and a total explosion of flavor but also because they are incredibly versatile and super easy to make and yes, they can be made ahead, talk about convenient!

To make them ahead just do everything except frying them, and store them in a freezer bag for up to 6 months. Once you are ready to party, just take them out and fry them, you don’t need to thaw them or anything!

But let’s talk about the flavor of the Fried Mac and Cheese Bites because that alone should get a complete post (that’s how good they are!). These are flavorful without being too overpowering so they are great by themselves or served with some dipping sauce, and they are cheesy because well the cheese in the mac and cheese and because they are coated in a mix of breadcrumbs and parmesan cheese.

Fried Mac and Cheese Bites

Ingredients

4 Cups macaroni

1½ Cup cheddar cheese

3 Eggs, beaten

1 Cup bread crumbs

3 Tbsps parmesan cheese

2 Bay leaves

Vegetable oil

Salt to taste

Directions

In a pot boil the water with the bay leaves, salt, and pasta. Cook until al dente or according to package instructions.

Turn off the heat, drain and discard the water and bay leaves.

Stir in the cheddar cheese until melted.

Refrigerate for at least 3 hours, then make bite sizes balls with the pasta mix.

Preheat the vegetable oil in a frying pan over medium heat.

Place the breadcrumbs in a bowl.

Brush the mac and cheese bites with the eggs, then place them in the bowl with the breadcrumbs and parmesan cheese to coat them.

Increase the heat up to medium-high and fry the mac and cheese bites until golden, transfer to a wire rack to drain the oil.

Serve and enjoy.
